Cottage Cheese Dumplings
Ingredients:
- 500 g low fat curd cheese
- 4 eggs
- 6 tbsp erythritol (or sweetener of your choice)
- 10 tbsp oat bran
- coconut oil
- greek yoghurt
- vanilla protein powder
Directions:
- Separate the eggs, and beat the egg whites until stiff peaks form.
- Mix the cheese and yolks with a mixer, then carefully add the beaten egg whites. Put the mix in the refrigerator for half an hour.
- Boil water in a large pot.
- Heat coconut oil in a frying pan. Add the oat bran and cook, stirring or tossing often, until they start to color and crisp, about 5 minutes.
- Once the water is boiled, make golf ball sized dumplings from the mix, and cook for about five minutes.
- Cover the the cooked dumplings with the oat bran.
- Serve with vanilla protein mixed with Greek yoghurt.
