I think the smell of fresh cake gives a home a very special cosiness. And I can barely put into words how incredibly good these muffins smelled when I baked them.
Ingredients:
8 tbsp melted coconut oil
2 eggs
1/2 cup milk of your choice
2 cups gluten free oat flour
3/4 cup sweetener of your choice
2 teasp baking powder
pinch of salt
fresh blueberries
Directions:
Preheat the oven to 190 Celsius.
Line a 12- cup muffin tin with papers.
Whisk the oil, eggs, and milk together in a bowl.
In another bowl, whisk together the flour, the sweetener, baking powder and salt.
Stir the wet ingredients into the dry ingredients and fold in the blueberries.
