A super-delicious cake, which is a great way of using plums when in-season. The plums can be replaced by apricots or small peaches and it can be eaten hot or cold.

- Separate the egg whites from the yolks.
- Mix the egg yolks with the sweetener until creamy then add the oat flour, baking soda, coconut oil, lemon zest and the water.
- Whip the egg whites until hard peeks, then carefully add it to the oat flour mixture.
- Fold it into a pan and top it with seedless plums, cinnamon and sweetener as well.
- Bake it on 160 Celsius for about 40 - 45 minutes.
