Walnut Dumpling Muffins with Vanilla Custard

This recipe is one of my favorites. I love the crunchiness of walnuts with the sweet and smooth vanilla custard.


  • 80 g oat flour
  • 10 g wheat gluten
  • 15 g yeast
  • 1 egg + 1 egg white
  • 80 g light curd cheese
  • sweetener
  • pinch of salt
  • 1 tbsp coconut oil
  • 80 g ground walnuts


  1. Preheat the oven to 170 Celsius.Add the yeast to 80 ml lukewarm water.
  2. In a large bowl, sift the flour and wheat gluten, then add the eggs, curd, sweetener, salt and coconut oil. Add the yeast and mix well.
  3. Cover the mixture and let it rise for an hour in a warm place.
  4. Make small balls from the dough and roll them in the ground walnuts. Put the small balls in a non-stick muffin pan. Let them rise again for half an hour in a warm place.
  5. Bake the muffins for 20-25 minutes, until golden brown.
  6. Serve with vanilla custard.
