Plum Sponge Cake (gluten free, dairy free)

A super-delicious cake, which is a great way of using plums when in-season. The plums can be replaced by apricots or small peaches and it can be eaten hot or cold.



Ingredients:

Directions:

  1. Separate the egg whites from the yolks.
  2. Mix the egg yolks with the sweetener until creamy then add the oat flour, baking soda, coconut oil, lemon zest and the water.
  3. Whip the egg whites until hard peeks, then carefully add it to the oat flour mixture.
  4. Fold it into a pan and top it with seedless plums, cinnamon and sweetener as well.
  5. Bake it on 160 Celsius for about 40 - 45 minutes.
