Berry Curd Cheese Cake

This is the cake that's a big hit always, every time, every occasion. I've never met anyone who didn't like it. It's very easy and quick to make, and you can even use seasonal fruits.


  • 3 packets of sugarfree biscuits
  • 200 g butter
Cream filling:
  • 200 g forest fruits mix
  • 250 ml low fat plain yoghurt
  • 750 g low fat curd cheese
  • sweetener of your choice
  • 1 packet unflavored gelatine


Make the base:
Put the biscuits into a food processor, add the butter and mix it well. Put the base in a form of your choice and bake it on 180 Celsius for 10 minutes.

Make the filling:
Put the curd cheese into a food processor and mix it till creamy. Add the yoghurt and sweetener. Then pour the cream filling over the base. Put it in the fridge.
Cook the gelatin with the fruits according to instructions on packet. Let it cool a bit, then pour on the cream and put it in the fridge for 4-6 hours.
