Blueberry Muffins (gluten free, dairy free)

I think the smell of fresh cake gives a home a very special cosiness. And I can barely put into words how incredibly good these muffins smelled when I baked them.

Ingredients:

  • 8 tbsp melted coconut oil
  • 2 eggs
  • 1/2 cup milk of your choice
  • 2 cups gluten free oat flour
  • 3/4 cup sweetener of your choice
  • 2 teasp baking powder
  • pinch of salt
  • fresh blueberries
Directions:
  1. Preheat the oven to 190 Celsius.
  2. Line a 12- cup muffin tin with papers.
  3. Whisk the oil, eggs, and milk together in a bowl.
  4. In another bowl, whisk together the flour, the sweetener, baking powder and salt.
  5. Stir the wet ingredients into the dry ingredients and fold in the blueberries.
  6. Bake for 25-30 minutes.
